Ingredients

belgian endives (Separated into 24 leaves) 2
limes (Cut into 24 small cubes with peels on) 1
large ginger root (Cut into 24 small cubes, salted for 5 to 6 minutes, rinsed and dried thorughly) 2
tart apples (cut into 24 small cubes with peel on) 6
pickled pearl onions (quartered lengthwise) 24
dry-roasted unsalted peanuts 24
small cubes of smoked salmon (not lox)Instructions
Line a platter with the endive leaves. Fill each with a cube each of the lime, ginger, and apple. Add a quarter of a pearl onion and a peanut. Top with a cube of salmon. When ready to eat, pick up the endive and eat in one or two bites.
