Description
Sorbet made with the black Zapote
Ingredients
1 3⁄4 c
Sugar 5
Zapote (black) (Peeled) 1 c
Water (Cold water) 1 c
Orange Juice 5 oz
Cognac (or Rum)Instructions
Peel the zapotes and run the through a sieve with the water and orange juice, then add the sugar and cognac. Then make granita or sorbet with an ice-cream maker.
Notes
Not sure about the cognac or rum. Other recipes call for Sauternes or tequila. Other recipes don't add alcohol.
There is a big difference between the Zapote Negro fruit that has a black pulp and the brown Zapote with a thicker and grayish skin.
