Super easy to make, super delicious! --don't skimp on the butter!
1 lb salmon skinless and boneless – one piece or multiple pieces
1 package of any pasta (I recommend Penne Rigatti)
3 garlic cloves finely sliced
4 tablespoons unsalted butter
Dash olive oil
Salt and pepper
Parsley and chives for garnish
Preheat the oven to 400 F. Cook pasta and strain. Place salmon on a lightly oiled oven proof dish. Salt and pepper. Place the butter on top of fish divided into tbsp, distribute garlic on top of each fillet, add any other seasonings, dill, tarragon, cumin, etc., squeeze a bit of lemon over fish. Bake in hot oven for 15 min. Remove from oven and flake into large chunks, then add pasta into dish and toss gently. Add more lemon juice and chopped chives and parsley to garnish.
