Garibaldis


Description

These are classic Mexican cupcakes in the shape of a cut cone, covered with apricot marmalade and mini sugar pills. The name probably comes from the mercenary soldier Giuseppe Garibaldi who fought with Madero during the Mexican Revolution.

Ingredients

600 g
All Purpose Flour
450 g
Sugar
3 g
Baking Powder
550 g
Butter
14
Eggs
1
Lime (Grated rind)
10 ml
Vanilla Extract
1 1⁄2 c
Apricot Marmalade
2 c
Sugar Pills (Small and round sugar pills as seen in picture (no substitutes!))

Instructions

Cream the butter and sugar in electric mixer.
Add the eggs one by one and the grated lime rind.
Add the flour and the Baking Powder and mix well.
Put into cupcake molds that are well greased and floured.
Bake at 325 F for 15 to 20 min approximately (the top should be firm to the top).
Take the cupcakes out of the mold and brush the marmalade (with a bit of water), then coat well with the sugar pills.
