Miso Glazed Black Cod

This is a simple and delicious recipe that takes black cod to the next level in flavor. It completely cures the fish from any fish taste and makes it sweet and delicious with complex flavors of miso that extend the flavors of any vegetables and grains server with it.

Ingredients

3 Tbsp of white Miso paste
2 Tbsp of water
2 Tbsp of Mirin sauce
2 Tbsp of sake or 1 tablespoon of Tequila or any other white alcohol (e.g. Vodka, Gin, Rum). If you use hard liquor compensate water with an extra Tbsp.
1 lb Black Cod cut into 2 fillets

Directions

Preheat oven to 375 F. Mix ingredients except Black Cod into a bowl. Put fish fillets into plastic Ziploc bag and pour the marinade in. Let it rest for at least 20 - 40 min in the refrigerator. Heat a no-stick oven proof pan large enough to fit both fillets until it is extremely hot. Pour very little oil to coat the pan. Once it is extremely hot put the fillets skin side up for 3 minutes. Flip carefully with a spatula. Place pan in the oven for 10 minutes. When time is up check the fish, they should look flaky but juicy. You should be able to see the pin bones; you can remove them before serving.
